  • Quick and Easy Olive Oil Fried Potato Chips

    INGREDIENTS:

    Potatoes

    Olive oil or other vegetable oil (it was the only kind of oil I had)

    1 clove of garlic, crushed (optional)

    Your favorite herbs (try rosemary or thyme)

    Clamato Rimmer Seasoning Salt (use whichever salt you like/have)

    INSTRUCTIONS

    1. Don’t waste your time on peeling the potatoes. Just cut them in 1/8-inch thick round slices.
    2. Add about 2-3 cm of oil to a pot or sauté pan. Add the crushed garlic to the oil.
    3. Cook the potato slices in hot oil for 5-10 minutes until golden brown. Stir occasionally.
    4. Drain on kitchen towel.
    5. Add the seasoning and herbs.

  • Olive Oil Fried Potato Peel Chips

    Homemade fried potato skins are my latest snacking discovery. I knew they tasted great, but didn’t feel like saving them anyway. Thanks to their crunchy texture, they obviously make the perfect snack on their own, but you can also use them as that necessary salty and crispy garnish for your mashed potatoes, salads, soups and other dishes. Great alternative to croutons or bacon bits.

    INGREDIENTS:

    Potato peels (peels from 3 large potatoes should be enough for two people when eaten on their own as a snack)

    Olive oil (other vegetable oil should be fine too – experiment!)

    1 clove of garlic, crushed

    Italian herbs (or your favorite herbs)

    Black pepper

    Salt

    INSTRUCTIONS:

      1. Wash the potatoes and remove gross-looking, damaged parts.
      2. Peel the potatoes in long strips.
      3. Add about 2-3 cm of oil to a pot or sauté pan. Add the crushed garlic to the oil.
      4. Make sure the oil is hot and only then add the potato peels. Fry on medium heat, stirring occasionally, for 5-10 minutes until golden or brown.
      5. Drain on kitchen paper and add the seasoning.

    Serve the skins hot or put them in a jar and and keep them in your pantry for soups and other things.
